Grown in a belt that stretches from Spain in the east all the way out to India in the west, its high cost stems from the fact that it takes no fewer than 250,000 stigmas to make a mere half a kilo.
A staple ingredient in some African and South Asian cuisine, it also works beautifully as a flavouring agent in a variety of fish dishes.
